Wine Description

Harvest: By hand, selecting individual clusters.

Variety: 100% Tempranillo

Barrel Ageing: 24 months (French oak barrels)

HARVEST AND PRODUCTION

The wine is exclusively elaborated in the 2004 and 2005 vintages of the last decade. The grapes are manually harvested, selecting the best clusters at their optimal point of polyphenolic maturation. At the moment the grapes have the highest concentration of colour and tannins. The grapes are harvested from unirrigated vineyards which are more tha fifty years old and goblet-shaped so the grapes ripen little by little concentrating sweet tannins, aroma and colour, due to their low production.

Once the grapes were harvested, the wine was macerated for a total of 40 days, with the aim to intensely obtain all the concentration of the grapes, and to round out and refine the tannin.

After completing the fermentation and the maceration the wine was stored in new barrels of high quality French oak. The wine was aged for 24 months in slightly toasted barrels so as to preserve the grape characteristics. During the wine aging process, the barrels were frequently filled and the wine was racked in spring and autumn.

Finally the wine was fined and bottled.
